Our process

VARIETIES

The areas microclimate and soil substantially indicated the suitable varieties

capable of incorporating  into their flavours, aromas and colors, the  schizophrenic harmony of human existence on this Cycladic island.

T-OINOS WINES ΑRE DERIVERED FROM FOUR VINEYARDS

of a total planted area of 13 hectares. They are located on the outskirts of Falatados village, in Stegasta and Rassonas. The white grape varieties hosted are Malagouzia and Asyrtiko, while the red ones are Mavrotragano and Angoustiatis.

ΤHE VINEYARDS ARE LOCATED AT AN ALTITUDE OF 400-450 M. AND FEATURE A PLANTING DENSITY OF

10.000-11.500 plants per hectar. Given the area’s protected status, vine planting was non-destructive, while all grapes are organically grown. The vines are pruned in «gobelet sur échalas», the traditional way of pruning the Mediterranean vineyards.

HARVEST

GRAPES OF THE SAME VARIETY ARE HARVESTED IN SEPTEMBER IN TWO OR THREE SUCCESSIVE PASSAGES

at optimal fruit maturity. Picking and sorting is done entirely by hand. The alcoholic fermentation of all wines takes place in stainless steel and wooden tanks or oak barrels using indigenous yeasts, which give them a unique character.

WINE AGING

Tiniaki Ampelones - WINE AGING

THE RED WINES ARE AGED IN OAK FRENCH BARRELS FOR 12 TO 18 MONTHS.

After being bottled, they remain on our premises for at least two to four years before being placed on the market. Whites mature “sur lies” for six to eight months, while their storage after bottling lasts from two up to three months.
