YEAR 2015

Mild winter with frequent rainfall, with the exception of very low temperatures and snowfall in January.

Bud break came in mid-March. Good spring weather during flowering. Mild weather during summer and until harvest. 12°C difference between daytime and night.

Mild winter with medium rainfall.

Bud break came in the beginning of March. Sun and mild wind during flowering. Until harvest, we had hot and sunny days and low temperature during the night, with more than 12°C difference to daytime. August was the hottest month.

Harvest took place only very early in the morning with successive picking of the grapes of the same plot based on their maturity.

Hand picked grapes in 20 kg cases and pressed in pneumatic press. Alcoholic fermentation with indigenous yeasts in stainless steel tanks, with controlled temperature. Six months of maturation “sur lies”.

T-ΟINOS MALAGOUZIA

Marinated amberjack with green salad herbs, sea fennel and roasted pepper sauce.

INGREDIENTS

·  150 gr. amberjack fillet cut into very thin slices
·  Juice of 1 lemon
·  2 green peppers
·  A few leaves of lettuce, rocket, fresh spinach
·  Fresh chopped onion
·  50 gr. sea fennel
·  3 slices of bread 



INSTRUCTIONS

Grill the peppers or bake them in the oven until the skin is blackened. Once cooled, remove the skin and the seeds from the peppers. Then place them in the blender with a splash of olive oil, some vinegar, salt and pepper. 


Wash and drain very well the green salad herbs and then mix them in a bowl together with the sea fennel and fresh onion. Add salt, pepper and olive oil.
Place in a deep dish the slices of fish salted and then add the lemon juice for only 3 to 4 minutes to marinate.

Serve the fish with some olive oil and freshly grounded pepper on toasted slices of bread. Garnish on top with green herbs and the roasted pepper sauce.
